 TWICE-BAKED POTATOES

1.  Scrub four potatoes.  Pierce with a fork to allow steam to escape.

2.    Place potatoes in circle in microwave and cook. Even cooking requires turning over ½ way through the cooking time. Remember to allow for standing time.

3.  Cut a fourth off the top of the potato sitting on a plate.  Scoop the centers into a mixing bowl, leaving the skins in tact until it looks like a small canoe and save.

4.  Add to the potato mixture 3 T margarine, 1/3 c sour cream, 2 oz cream cheese and 2 T Parmesan cheese.  Mix thoroughly.

5.  Divide the mixture evenly and spoon it back into the four potato skins.

6.    Place potatoes on a plate and microwave on high power for 2 minutes, or until hot.
