TRIPLE CHOCOLATE COOKIE BY MERCEDE HOLTAN
1 1/4 c flour 1 tsp baking powder
1/2 tsp salt 1/4 tsp baking soda
1/4 tsp grd cloves 1/2 c unsalted butter
2 large eggs 1 lg egg yolk
1 c brown sugar 2 tsp vanilla
6 oz semisweet chocolate chips 6 oz white chocolate chips
6 oz bittersweet chocolate, finely chopped.
Combine dry ingredients together in a medium bowl. Melt the butter in a saucepan over medium heat. Remove from heat. Add the bittersweet choolate, stirring until melted. Set aside.
Whisk the eggs, sugar, and vanilla together in a medium bowl. Slowly stir in melted chocolate and butter. Stir in flour mixture to make a loose dough. Don't overwork the dough. Fold in the chips. Cover with plastic and refrigerate until firm, about 2 hours.
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper. Form dough balls about 2" each. Put on prepared baking sheets, leaving a couple inches between the cookies. Bake until outside is crackly, but the center is still moist, about 13-15 minutes. Cool on rack and enjoy.
