BAKED ONION RINGS
2 large onions 1 c flour
1/2 tsp salt 2 eggs
1/2 c milk 2 c bread or panko crumbs
Preheat your oven to 450 dgrees. Prepare 2 pans by setting cooling racks on a jelly roll pans.
Peel the onions and cut them into thick, 1/2" slices. Separate the slices into rings. Set up your breading station with 3 bowls. In one bowl place the flour and salt. Mix well to combine. In second bowl, beat together the eggs and milk and in the third bowl, place the bread crumbs.
Coat the onion rings by dredging in flour mixture, then the egg wash, and finally bread crumbs. Place on cooling racks. Repeat until all onion rings are coated.
To prevent burning, lift cooking rack off of jelly roll pan to remove any crumbs that fell of onion rings. Bake 15-20 minutes until crispy and browned.
