CHEESY CARROTS 

Boil 1 lb carrots - peeled and sliced.

Saute 1/2 onion, chopped in 1/3 c margarine.

Lightly grease casserole dish.

Layer carrots, Velveeta slices, and sauteed onions.  Repeat.

Cover with crushed cracker crumbs.  Bake until warmed through at 350 - about 30 minutes.
