 APPLE JUICE

Wash apples in cold water.  Use  an apple corer/segmenter to cut apples. 

*Apples do not need to be peeled if making juice.  However, you can use the pulp to make Apple Butter if you do peel them.

Fill a thick-bottomed pan with apples and add about 4" of water.  Cover and boil.  Reduce to medium heat until the apples are soft.

Separate the apples from the juice using a sieve or for less pulp add cheesecloth or jelly bag.  If just using a sieve and not wanting cloudy juice, refrigerate for 24-48 hours and carefully pour off clear liquid and discard sediment.

Add sugar and/or cinnamon to taste.
