ANGEL FOOD CAKE

1 1/2 c egg whites (12+)                                    1 c sugar

1 c powdered sugar                                             1 c cake flour

1 1/2 tsp cream of tartar                                   1/2 tsp almond extract

1 1/2 tsp vanilla                                                    1/4 tsp salt

Place egg whites in clean non-plastic bowl with cream of tartar and salt.  Beat on high until soft peaks form.  Gradually add sugar, beating until sugar is dissolved and stiff peaks form.

Meanwhile, sift powdered sugar and cake flour together and set aside.  Fold flour mixture into beaten egg whites, 1/4 cup at a time.  Be careful to limit loss of volume.

Gently sppon into an ungreased angel food tube pan.  Cut through batter with a knife to remove air pockets.  Bake at 350 for 40-45 mintues or until cake springs back when lightly touched.  It is normal for the top of angel food to "crack".
